Houji Cha is made from bancha, green tea leaves from the last harvest of the season, then roasted creating a light bodied tea. It is distinct from other Japanese green teas because it is roasted in a porcelain pot over charcoal, changing the leaf color from green to reddish-brown.
The roasting gives a toasty, slightly caramel-like flavor. A mild tea, Houji Cha is often served during meals, and because the roasting lowers the level of caffeine, it is preferred for children and the elderly.
